Ingredients

  • Crust:
  • 1 cup almond flour (120 grams)

  • 2 large pitted dates

  • 1 tablespoon honey

  • Filling:
  • 200 grams cottage

  • 8 large strawberries

  • 1 tablespoon honey or maple syrup

Directions

  • In a food processor, combine almond flour, dates, and honey to form the crust mixture. Process until the mixture is well combined and forms a sticky crust consistency.
  • Transfer the crust mixture to a lined baking dish (9×5 inch pan recommended)
  • Use a spatula to press the crust firmly into the bottom of the dish, creating an even layer.
  • In the same food processor, add cottage cheese, fresh strawberries, and honey. Process until smooth and creamy.
  • Pour the strawberry and cottage cheese mixture over the crust, spreading it evenly.
  • Place the dish in the freezer for about 3 hours. Allow it to thaw for 15 minutes before serving.
