  • 2 eggs

  • 3 tablespoons melted butter

  • 1/2 cup honey

  • 3 tablespoons unflavored Greek yogurt

  • 3/4 cup white flour

  • 3/4 cup oat flour

  • 1/2 teaspoon salt

  • 1/2 tablespoon baking powder

  • 60 grams white chocolate

Directions

  • Begin by preheating your oven to 350°F (175°C). Line a muffin tin with paper liners or grease it to prevent sticking.
  • In a mixing bowl, combine the wet ingredients. Start with the ripe bananas, mashing them until smooth. Then, add in the eggs, Greek yogurt, melted butter, and honey. Mix well until all the wet ingredients are fully combined.
  • Add in the dry ingredients. This includes the white flour, oat flour, salt, and baking powder. Mix them until they are evenly distributed. Be careful not to overmix; a few lumps are perfectly fine. Overmixing can make the muffins dense.
