  • 2/3 cup of shredded unsweetened coconut
  • 1/3 cup maple syrup
  • Vegan dark chocolate

How to Make it:

To recreate this nostalgic experience, simply blend together the coconut milk and maple syrup. Add the shredded coconut to your desired texture. Whether finely blended or with larger coconut shreds for an extra tropical touch. Pour the mixture into popsicle molds and let them freeze for at least 4 hours until solid. Once perfectly frozen, remove the popsicles from the molds and prepare for the finishing touch.

Dip just the front of each popsicle into melted dark vegan chocolate, adding a touch of decadence and a contrasting flavor. Sprinkle some shredded coconut over the freshly dipped popsicles for an extra burst of coconut flavor. Ingredients

  • 1 can full fat coconut milk

  • 2/3 cup unsweetened shredded coconut

  • 1/3 cup maple syrup

  • 1/2 cup vegan dark chocolate chips

Directions

  • In a blender, blend coconut milk and maple syrup
  • Add shredded coconut and pulse a few times, depending on how large you want the coconut shreds to be.
  • Pour the mixture into popsicle molds, filling them almost to the top. Divide mixture into 8 equal parts.
  • Place the popsicle molds in the freezer and let them freeze for at least 4 hours, or until completely solid.
  • Once the popsicles are frozen, remove them from the molds.
  • In a small flat plate, melt 1/2 cup of dark chocolate in the microwave. Microwave the chocolate in 15-second intervals, checking and stirring after each interval, until the chocolate is fully melted and smooth.
  • Dip the front part of each popsicle into the melted chocolate, allowing any excess chocolate to drip off.
  • Optional: Sprinkle shredded coconut on top of the chocolate-dipped part of the popsicles before the chocolate sets.
  • Place the chocolate-dipped popsicles on a parchment-lined tray and return them to the freezer for a few minutes to allow the chocolate to set.
  • Remove the popsicles from the freezer and let them sit at room temperature for about 10 minutes before enjoying. This will allow the popsicles to soften slightly and reach the ideal consistency.
