These are my homemade Vegan Mango Popsicles – perfect for anyone looking to enjoy a sweet treat without the guilt. These popsicles are packed with ripe mangoes, creamy coconut milk, and just the right drizzle of maple syrup for natural sweetness. They are my go-to for a healthy and delicious dessert.

The Idea for these Vegan Mango Popsicle


One of my greatest joys is taking a recipe I already love and transforming it into a healthier, yet equally delicious version. As I searched for a refreshing summer dessert, I couldn’t stop thinking about our recent trip to Brazil. The abundance of sweet, perfectly ripe mangoes we enjoyed there is unbelievable. They were breakfast and dessert almost everyday we were there. So, coming back to Japan, and craving mangoes like crazy, I had to make a dessert with mangoes as the main ingredient. And, that’s what led to these vegan mango ice cream popsicles. They are a taste of summer and a tribute to our favorite fruit.

Easy and Quick

Creating these mango ice cream popsicles is a breeze. To get started, simply gather the ingredients needed:

  1. ripe mangoes
  2. coconut milk
  3. pure maple syrup
  4. chocolate chips for melting
  5. coconut oil

How to Make these Vegan Mango Popsicles

Next, blend all the ingredients together in a blender – I personally rely on my trusty Vitamix for its powerful blending capabilities. Once the mixture is smooth and well-combined, it’s time to pour it into silicone popsicle trays. These trays are not only convenient but also make it effortless to remove the popsicles once they’re frozen. Finally, pop the trays into the freezer and patiently wait for the magic to happen. Enhance the flavor of these popsicles by generously drizzling them with a mix of melted chocolate chips and coconut oil. In no time, you’ll have a batch of irresistibly refreshing treats ready to be enjoyed on a scorching summer day.

Vegan Mango Popsicle

Ingredients

  • 500 grams ripe mangoes

  • 1 can full fat coconut milk (400 ml)

  • 2-4 tablespoons maple syrup (amount will depend on sweetness of mangoes)

  • 1/4 cup vegan chocolate chips for melting

  • 1 teaspoon coconut oil

Directions

  • Add mangoes, coconut milk and maple syrup in a blender.
  • Blend the ingredients together until smooth and creamy, ensuring there are no lumps remaining.
  • Taste the mixture and adjust the sweetness according to your preference by adding more maple syrup if desired.
  • Pour the mixture into silicone popsicle trays.
  • Place the trays in the freezer. Allow the popsicles to freeze completely, which usually takes about 4 to 6 hours or overnight.
  • Once frozen, remove the popsicles from the trays by gently twisting them.
  • In a microwave-safe bowl, combine the chocolate chips and coconut oil. Microwave the mixture in short intervals, stirring in between, until the chocolate and coconut oil are fully melted and smooth.
  • Drizzle the melted chocolate mixture over the popsicles, allowing the chocolate to cascade down the sides. Work quickly to avoid melting the popsicles. Once the chocolate is drizzled to your liking, promptly return the popsicles to the freezer and let them set for an additional 10-15 minutes, or until the chocolate is firm.
