Ingredients

  • 8 Medjool dates

  • 1/3 cup of shelled pistachios

  • 8 tablespoons natural peanut butter

  • 100 grams of chocolate (milk or dark chocolate, depends on your preference)
    Flaky salt

Directions

  • Gently open up the dates using a sharp knife and take out the pit
  • Press the dates into a cupcake mold. I like lining the cupcake tray with cupcake liners. You can use your fingers to press them down, the bottom of a small cup or a spoon. I like coating my fingertips with a little bit of coconut oil to prevent sticking to the dates.
  • Scoop a tablespoon of natural peanut butter into each cupcake mold, over the dates.
  • Sprinkle 3 or 4 pistachios over the peanut butter layer.
  • To melt chocolate in the microwave, start by breaking it into small pieces and placing them in a microwave-safe bowl. Heat the chocolate in 15 second intervals, stirring well each time, until almost fully melted. Be cautious not to overheat.
  • Pour melted chocolate over each cup, covering all the ingredients.
