My passion for the rich and diverse flavors of Mexican cuisine is unwavering, so it’s no surprise that Mexican restaurants often top my list of favorites. Consequently, there’s an undeniably fun and satisfying tradition in our household. It’s the the ritual of scooping up generous helpings of salsa with a crispy tortilla chip. This has become our family’s go-to snack for movie nights or, quite honestly, during any moment when we crave a burst of flavor to liven up our day. Hence, my pineapple salsa has emerged as a sweet and savory celebration in a bowl. It’s inspired by the classic Mexican flavors with an added fruity twist of my own.

Pineapple Salsa

  • 1 1/4 cups small diced pineapple (250 grams)

  • 2 medium tomatoes small diced (250 grams)

  • 1/2 red onion small diced (100 grams)

  • Cilantro bunch finely chopped (40 grams)

  • 1/2 cup lemon or lime juice – I use 1 lime, 1 lemon (115 ml)

  • 3 cloves garlic crushed

  • 1 1/2 teaspoons salt


  • Combine all ingredients in a serving bowl.
  • Adjust salt or lemon/lime juice to taste.
