Roll this dough out onto a parchment paper for easier transfer unto the pie plate. Whether using a petite 9-inch pie dish or opting for a larger format to suit your occasion, this tart adapts effortlessly (you might need to double the dough for a larger dish or tray).

Begin with 120 grams of velvety mascarpone cheese, generously spread over the awaiting crust. Gently sprinkle fragrant thyme leaves (without stems) and a touch of salt, setting the stage for the starring ingredient – the onions. Slice your onions into half-moon shapes, approximately 1/2 inch thick. Arrange them with care, double layering where needed. For this rendition, I utilized 3 small onions.   • For the crust:
  • 1 cup white wheat flour

  • 3 tablespoons solid butter

  • 4 tablespoons water

  • 1/2 teaspoon salt

  • For the filling:
  • 120 grams Mascarpone cheese

  • 1 tablespoon fresh thyme without the stem

  • 3 small onions cut into 1/2 moons, approximately 1/2 inch thick.

  • 1 tablespoon olive oil

  • 1 tablespoon honey

  • 1/2 teaspoon salt


  • Add the flour, butter and salt to a food processor and pulse until butter is mixed in the flour.
  • Add water and pulse until a dough is formed.
  • Place the dough over a piece of parchment paper and roll it out until the desired size.
  • With the help of the parchment paper, transfer the dough to the pie dish.
  • Spread the cheese over the rolled out dough.
  • Sprinkle some salt over the cheese.
  • Place the thyme leaves over the cheese.
  • Arrange the onions over the cheese. It is ok to double layer in areas where the onions are too thin.
  • Over the onions drizzle 1 tablespoon of olive oil, 1 tablespoon of honey and sprinkle salt.
  • Bake for 40 minutes at 350 degrees F. At the end of baking, broil for 1-2 minutes to get a slightly golden color over the onions.
