Ingredients

  • 100 grams of extra firm tofu

  • 1/4 teaspoon salt

  • 1/2 teaspoon garlic powder

  • 1 tablespoon cornstarch

  • 1/4 teaspoon smoked paprika

  • 1 tablespoon diced or thinly sliced red onions

  • 1/2 cup sliced cucumbers

  • 1/4 cup diced fresh mangoes

  • 40 grams sliced avocado (5 thin slices)

  • 5 lettuce leaves

  • Basil leaves and mint leaves (optional)

  • Dressing:
  • 1 teaspoon olive oil

  • 2 teaspoons balsamic vinegar

  • 1/2 clove crushed garlic (or 1/8 teaspoon garlic powder)

  • salt to taste

Directions

  • Start by pressing the tofu using a tofu press for about 20 minutes. This helps remove excess moisture and allows for better texture and flavor. Once pressed, cut the tofu into bite-sized cubes.
  • In a separate bowl, combine cornstarch, salt, smoked paprika, and garlic powder. Evenly distribute the mixture over the tofu cubes, gently toss the tofu to make sure they are well coated.
  • Lightly spray the tofu with olive oil spray.
  • Preheat your air fryer to 400 degrees Fahrenheit (200 degrees Celsius). Place the coated tofu cubes in a single layer in the air fryer basket. Air fry for 20 minutes, turning the tofu once after 10 minutes to ensure even cooking and crispiness
  • Start assembling your crispy tofu lettuce wraps. Lay out 5 lettuce leaves. Add tofu, cucumber, avocado, mango, red onions, basil and mint.
  • Drizzle the balsamic dressing over each wrap and enjoy them!
