Ingredients

  • 3 large carrots

  • 1 tablespoon olive oil

  • 2 tablespoons maple syrup

  • 3 tablespoons parmesan cheese

  • 1 teaspoon garlic powder

  • 1 teaspoon salt

Directions

  • Preheat oven 450 degrees F
  • Wash the carrots and cut off the tops (you may peel them if you prefer)
  • Cut the carrots at an angle in 1 1/2″ slices.
  • Place cut up carrots in a bowl and add the remaining ingredients
  • Place carrots in a single layer on a baking sheet lined with parchment paper.
  • Roast the carrots in the oven for 25 minutes until they are golden-brown.
  • For the Greek Yogurt Dip
  • Chop 1 small onion and crush 2 cloves of garlic
  • Saute onions and garlic in 2 teaspoons of olive oil
  • Mix the sauteed onions and garlic in one cup of Greek yogurt
  • Add 1 teaspoon of salt and chopped dill to taste
