Crunchy Fajita Tacos

Each serving has 2 tacos

Ingredients

  • Fajita Veggies:
  • 1 large yellow pepper

  • 1 large red pepper

  • 1 large yellow onion

  • 1/2 tablespoon olive oil

  • 1 teaspoon salt

  • 2 teaspoons garlic powder

  • 1 teaspoon cumin powder

  • Tacos:
  • 8 flour tortillas

  • 1.5 cups cooked rice lightly packed

  • 1 cup cooked black beans – liquid removed

  • 1.5 cups shredded cheese (cheddar or mozzarella or a Vegan Cheese of your choice)

  • olive oil

  • lime

  • Southwest dressing

Directions

  • Preheat oven 410 F
  • Slice the red pepper, yellow pepper, and onions lengthwise into strips, about 1/4 inch wide.
  • Drizzle olive oil and add spices and salt. Mix well to combine, ensuring the vegetables are evenly coated.
  • Arrange vegetables onto baking tray
  • Bake for 20-25 minutes turning once after 10 minutes in the oven.
  • Remove the vegetables from the oven but leave the oven on.
  • Start assembling the flour tortillas
  • Add about 3 tablespoons of rice, 2 tablespoons of black beans to each tortilla.
  • Divide the fajita veggies among the 8 flour tortillas, ensuring an even distribution. Top each tortilla with shredded cheese, dividing it equally among the tacos.
  • Place them in a baking sheet, spray the tacos with olive oil and bring them to the oven for 20 minutes
  • Dip these in my Vegan Creamy Southwest Dressing or squeeze lime over them. They’re ready to serve!
