Strawberries & Lemons: A Summer Duo

When you think of summer fruits you can’t help but think of strawberries and lemons. These vibrant fruits aren’t just nature’s way of quenching our thirst and uplifting our mood; they’re also nutritional powerhouses. Both are rich in Vitamin C, playing a vital role in boosting our immunity and revitalizing our skin. Another thing I love about this recipe is how low in calories it is. Two generous servings, with each glass barely touching 70 calories. Because summer is full of ice cream and other treats already, it’s great to have a low calorie option to refresh and enjoy.

Every week, without fail, my teens shoot me that look – yep, they’re craving their favorite strawberry-lemon drink again. It’s become our thing. The only challenge? Keeping enough frozen strawberries in stock! But here’s my mom-hack: I load up on these red gems and stash them in the freezer, where they happily chill for months. So, during our summer shopping trips, I always snag an extra bag or two. That way, I’m always ready for their next “pretty please” moment.

Ingredients

  • 400 grams frozen strawberries (14 oz)

  • 1 1/3 cup water

  • 1/3 cup lemon juice (2 lemons)

  • 2 packets of stevia (adjust to taste)

Directions

  • Blend all ingredients in a blender until smooth.
  • Pour the drink into two cups. Enjoy!

Notes

  • A high speed blender such as a Vitamix is ideal, but it can be done in any type of blender. If you are not using a high speed blender you might need to add a little more water. Pause the blender often to scrape the sides and continue blending until smooth.
