  • 1 tsp butter
  • Cottage cheese (2 tablespoons for each toast)

  • Capers (1 tablespoon for each toast)

Ingredients

  • Bread of your choice

  • 1 tsp butter

  • 2 tablespoons Cottage cheese

  • 2 radishes

  • 1 teaspoon salt

  • 1 tablespoon Capers

  • Fresh dill

  • For the Marinade (This marinade will make more than you need, but you can save the extra for dressings)
  • 1/4 cup balsamic vinegar

  • 1/4 cup olive oil

  • 1/4 cup water

Directions

  • Toast the bread: Apply 1 tsp of butter to one side of the bread and toast it in a frying pan for about 2 minutes on each side until it’s golden brown and crispy.
  • Prepare the cottage cheese: Add cottage cheese to a food processor and blend it until it becomes smooth and lump-free.
  • Marinate the radishes: Use a mandolin to slice 2 radishes thinly. Place the sliced radishes in a bowl and add 1/4 cup balsamic vinegar, 1/4 cup olive oil, 1/4 cup water, and 1 teaspoon of salt. Allow the radishes to marinate for 2 hours. Don’t discard the liquid; it makes a perfect salad dressing and can be stored in the fridge for up to 3 days. You can also use it to marinate more radishes, onions, or cucumbers.
  • Assemble the toasts: On the side of the bread with the applied butter, spread 2 tablespoons of cottage cheese. Add the marinated radishes to your liking, top with capers (about 1 tablespoon per toast), and drizzle a little of the marinade liquid over the capers and radishes. Finish by chopping fresh dill over the toast.
